I LOVE Empress Gin.

Ruby's Rose Garden
2oz Empress Gin
1oz lemon juiceÂ
1oz rhubarb syrup *
A dash of rose water
1oz chickpea water (or egg white)Â
Dry shake in a cocktail shaker, then shake again over ice. Pour into a chilled coupe glass and garnish with rose petals and a twist of rhubarb.Â
* chop 5 stalks of rhubarb into small chunks and heat over a hob with 1 cup of water. Once the water has bodied, stir in one cup of sugar. Stew the rhubarb in the sugar water for 5-10 minutes on low heat. Decant and leave overnight, then strain out the pulp the next day.
