Jungle Bird

Want a bright little slice of joy? 'Tis the season for a re-emergence of fun, so let’s have at her.

A Jungle Bird is a classic tiki drink, but I have added a slight variation because I wanted a foam with mine. Truly, I love a foam! It’s up to you if you add the egg white or aquafaba as it isn’t part of the traditional recipe, but I do think it’s fun! Also, traditionally one would use 1:1:1:1 of Campari, pineapple juice, lime, and syrup, but I wanted to introduce some passionfruit for an extra tropic twist. If you don’t have multiple juices, pick either pineapple or passionfruit!

Jungle Bird


2oz Dark Rum

3/4 oz Campari

3/4 oz pineapple juice

3/4 oz passionfruit juice

3/4 oz fresh lime

3/4 oz Demerara sugar syrup

1/2 oz egg white or aquafaba (optional )


Shake vigorously over ice and strain into a sassy glass. Traditionally it would be a tumbler, but I have these lovely Collins glasses that add a splash of colour!


Garnish ostentatiously, like a tropical bird’s plumage!
